Our oysters grow in the dynamic rhythm of the Wadden Sea, a landscape that rises and falls twice a day with the tide. This constant shift of water, wind, and light shapes their character: firm, briny, and exceptionally clean in flavor.
We harvest our oysters by hand from the intertidal beds near Lauwersoog. This traditional, low-impact method keeps the oyster banks intact and protects the biodiversity of the Wadden ecosystem. Each oyster is carefully selected and cooled immediately to ensure optimal freshness.
Wild Wadden Oysters are known for their remarkably strong adductor muscle. Because they are exposed to air for several hours each day, they develop a dense, creamy texture and a satisfying bite. Their flavor evolves with the seasons: bright and mineral in winter, fuller and rounder in spring and autumn.
These oysters carry a true sense of place — shaped by the open landscape, the pure tidal waters, and the craftsmanship of the fishers who harvest them.
